Mysore Pak in Ghee Recipe

Ingredients: 1 cup gram flour, 1 cup sugar, 1 cup ghee

(Use one and a half cup of ghee, that is, by separating 1 cup and a full cup of ghee. You can make more or less ghee as per your liking.)

Method: 

(1) First, put the pan on low heat, add sifted gram flour and stir fry without stopping. But one thing to keep in mind is that the color of gram flour should not change at all (Doing so also gives your hand a nice exercise and also helps you understand how to focus). This will take about 10-15 minutes. But time depends on everyone's gas speed. If it smells good, turn off the gas.  

(2) Now when the gram flour cools down, strain it again. Now take it out in a bowl and add 1 cup of ghee in it little by little and mix it with gram flour spoon. Pour in half the ghee gram flour in 1 cup. 

(3) Now take a tray on one side and put ghee on it to make it ready. 

(4) Now turn on the heat again and put the kadai in it, add 1 cup sugar and half a cup water and keep stirring on low heat. Once the sugar is completely dissolved, cook for only 2-3 minutes but keep in mind that it should not be cooked for 1 hour. Now add gram flour paste and keep stirring.

 (5) Besan should be completely homogeneous in sugar paste. When both are combined, add 2 tbsp ghee and keep stirring. Ghee should be poured into the gram flour. When the whole ghee is mixed in the gram flour, add 2 tbsp ghee again. Repeat this process 3-4 times. 

(6) Now when the gram flour starts to leave the pan automatically, immediately turn off the heat and pour it into the ghee tray and take 1 tbsp ghee and make it uniform on the gram flour. 

(7) Leave this tray aside for about half an hour. Now when the tray is cool, fold it in a plate and tap it from above. Once the set ice cream is in the plate, cut it to the size you want and enjoy it by showing photos to others and posting status on WhatsApp.
