Kolhapuri Special Pandhra Rassa White gravy
White gravy (Pandhara Rassa)
1. One kilo of meat,
2. 4-5 tablespoons garlic paste
3. Salt
4. Ghee
5. A large bowl of wet coconut shells: Remove coconut milk.
6. Slice 2-3 green chillies
Spices:
1. Green cardamom: 6-7 nos
2. Cinnamon: 6-7 pieces
3. Bay leaves 4-5 leaves
4. Black seed 20-25 seeds
5. Clove 10-12 nos
6. Badian / Chakriful: 3-4 nos
7. Masala Cardamom: 3-4 nos
For sharing:
1. Two tablespoons of sesame
2. One and a half tablespoon of poppy seeds
3. Cashews 15-16 nos
4. Almonds 7-8 nos
Bake all of the above ingredients over low to medium heat and separately. Then when it cools down, combine it, turn it through a mixer, add water and make it very fine. You can use cashews instead of cashews. But since we love cashew-almonds, they are used.
Let us now turn to action:
1. Add garlic paste and salt to the washed meat.
2. Heat a large cooker. Pour ghee in it. When the ghee is hot, add all the spices like cinnamon, cardamom, chakriful, bay leaf, black pepper, cumin, cloves, masala cardamom and cook for three to four minutes. All the spice extracts will come out nicely. Saute two or three green chillies in half.
3. Add salt and garlic paste, add marinated meat and saut well. Leave it for 5 minutes and then pour hot water over it and mix it. Put water on the lid and let it steam for ten minutes.
4. Now add roasted poppy seeds, sesame seeds, cashew nuts and almonds to the mutton and fry well. Add more hot water if needed.
5. Pour coconut milk and mix well. Now cover and cook the meat with 7-8 whistles.
(If the meat is cooked right away, you can take less whistles than you think. And if you are doing this in a pan, cook the meat with water on the lid until it is cooked.)
Now open the lid so that the white gravy is ready and you can feel it spread all over the house! This gravy can be drunk anytime as a hot soup just like we take it at meal time. When serving, add another piece of mutton and gravy in a bowl and serve.
